Our Process
Every bottle of Tequila BROTE goes through a process that respects
tradition and honors the agave.
Harvest:
Our agaves grow in volcanic lands rich in iron and minerals, nourished with vermicompost that we make from the agave's own waste. This regenerative practice ensures fertile and balanced soils, which results in healthier plants with a higher concentration of sugars and superior aromatic profiles.
Cooking:
We cook our piñas in traditional hornos de mampostería for 24 hours, followed by a 24-hour rest. This slow cooking brings out the pure, sweet, cooked agave notes that define BROTE.
Extraction:
The cooked agave goes through our Strudel mill (shredder) / Expeller train, an exclusive system from Destiladora Agave Azul designed to shred the piña and release its natural sugars. During this process, the equipment partially breaks down the agave structure and separates part of the pulp, allowing us to conserve a portion of whole pulp. This system enables us to incorporate pulp during fermentation, adding greater richness of natural compounds and complexity to the tequila's profile.
Fermentation:
Fermentation is one of the most important phases of the process. In our jacketed, cone-shaped, and semi-covered tanks, the ideal temperature for yeast activity is maintained, allowing for a stable and controlled fermentation. This design promotes natural aeration of the must and greater efficiency in sugar transformation, contributing to the development of the tequila's aromatic richness and character.
Distillation:
Through a slow double distillation, the tequila reaches its maximum purity. Here we balance fats and methanol, refining the distillate to achieve a clean and balanced profile. With this process, we define the character and excellence of our tequilas.
Aging (optional):
Some expressions are aged in oak barrels, adding complexity and depth.

Bottling:
Our tequila is bottled with no additives, artificial sugars, or flavors, preserving the authentic taste of 100% blue agave.
The result is a premium tequila that's true to its roots.
Closing the cycle:
life returns to the earth. The process doesn't end with the tequila. The agave residues are transformed into vermicompost, which regenerates the soil and nourishes the fields once again. This way, we close the production cycle sustainably, ensuring that every drop of tequila contributes to the future of our land.
